Aubergine and Sweet Potato Shakshuka with Garlic Cashew Cream

Ingrediënten
- aubergines
- olive oil
- smoked paprika
- fine sea salt
- ground black pepper
- garlic clove
- cashew nuts
- almond milk
- lemon juice
- onions
Bereidingswijze
- Preheat oven to 180°C.
- Place a bowl on mixing bowl lid then weigh in aubergines and 20 g oil. Remove bowl from lid then add paprika, ½ tsp salt and 1 pinch pepper then stir to coat. Transfer to a large baking tray and set aside.
- Place garlic, cashews and 10 g oil in mixing bowl then chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula then cook 2 min/100°C/speed 1. Meanwhile, bake aubergines for 25-30 minutes (180°C) until soft and cooked.
- Add milk to mixing bowl and cook 10 min/100°C/speed 1
- Add lemon juice, 1 pinch salt and 1 pinch pepper then blend 40 sec/speed 7. Transfer to a small serving bowl and set aside. Clean mixing bowl.
