Ingrediënten
- pudding rice
- whole milk
- unsalted butter
- fine sea salt
- natural vanilla extract
- rum (optional)
- raisins (optional)
- tart apples
- freshly squeezed lemon juice
- caster sugar
Bereidingswijze
- Place milk, butter, salt, vanilla and rice in mixing bowl then cook 35 min/90°C//speed 0.5. Meanwhile, mix 2-3 Tbsp rum (if using) and 2-3 Tbsp raisins (if using) in a small bowl. Transfer rice pudding to a large bowl, place cling film directly on top of the rice to prevent a skin forming and leave to cool for 30 minutes. Meanwhile, rinse mixing bowl and continue with recipe.
- Place apples, 20 g lemon juice and 20 g sugar in mixing bowl then chop 10 sec/speed 4. Transfer to simmering basket over a bowl and continue with recipe.
- Insert butterfly whisk. Place eggs, remaining 1 tsp lemon juice and remaining 60-80 g sugar in mixing bowl then mix 8 min/37°C/speed 4. Meanwhile, preheat oven to 180°C. Grease a baking dish (30 cm x 25 cm x 6 cm) with butter and sprinkle with a little sugar. Squeeze chopped apples and mix in a bowl with reserved rum raisins (if using) and ½ tsp cinnamon (if using).
- Remove butterfly whisk. Add whipped eggs to rice pudding and mix carefully with spatula. Pour ⅔ rice mixture in prepared baking dish, spread apple and raisin mixture on top and cover with remaining rice mixture, smooth down and sprinkle with flaked almonds.
- Bake for 40 minutes (180°C) until golden brown. Leave rice casserole to cool briefly, cut into pieces and serve warm.
