Ingrediënten

  • pears
  • unsalted butter
  • golden caster sugar

  • double cream
  • lemon juice
  • walnut, shelled
  • unsalted butter

Bereidingswijze

  1. Place sugar, butter, cream and lemon juice in mixing bowl then, without measuring cup, cook 7 min/120°C/speed 1. Transfer caramel immediately to prepared cake tin and arrange pear slices over caramel.
  2. Place walnuts in mixing bowl and mix 8 sec/speed 4.
  3. Add butter, 80 g sugar and salt then mix 10 sec/speed 4. Transfer to prepared cake tin, distributing batter evenly over pears. Arrange sliced bread over the crumble.
  4. Insert butterfly whisk. Place eggs, milk, ricotta cheese, 50 g sugar and custard powder in mixing bowl. Split vanilla pod lengthwise and scrape out seeds. Add seeds to mixing bowl and mix 2 min/speed 4. Remove butterfly whisk and pour mixture into cake tin. Press bread down with hands or spatula to ensure bread gets soaked with filling mixture. Wrap in reusable wrap or cling film and refrigerate for 3 hours or overnight.
  5. When this time is nearly up, preheat oven to (170°C). Bake for 40 minutes (170°C). Allow to cool slightly and serve warm or cold, sprinkled with icing sugar.
