Ingrediënten

  • fresh parsley leaves
  • onions
  • olive oil
  • chestnut mushrooms
  • water
  • sour cream
  • double cream
  • vegetable stock paste, homemade
  • lemon juice
  • fine sea salt

Bereidingswijze

  1. Place parsley in mixing bowl and chop 3 sec/speed 8. Transfer to a bowl and set aside.
  2. Place onions in mixing bowl and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  3. Add oil and mushrooms then sauté 5 min/120°C//speed 1.
  4. Add water, sour cream, cream, stock paste, lemon juice, salt and pepper then cook 12 min/98°C//speed 0.5. Meanwhile, preheat oven to 160°C. Season pork with salt and pepper then sear in a hot frying pan on the hob with 2 Tbsp oil for 2 minutes on each side. Remove from the pan.
  5. Place in casserole dish with mushroom sauce and cook for 20-30 minutes (160°C). Meanwhile, insert simmering basket, weigh in rice and rinse under cold water until water runs clear.
