Ingrediënten
- fresh parsley leaves
- onions
- olive oil
- chestnut mushrooms
- water
- sour cream
- double cream
- vegetable stock paste, homemade
- lemon juice
- fine sea salt
Bereidingswijze
- Place parsley in mixing bowl and chop 3 sec/speed 8. Transfer to a bowl and set aside.
- Place onions in mixing bowl and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
- Add oil and mushrooms then sauté 5 min/120°C//speed 1.
- Add water, sour cream, cream, stock paste, lemon juice, salt and pepper then cook 12 min/98°C//speed 0.5. Meanwhile, preheat oven to 160°C. Season pork with salt and pepper then sear in a hot frying pan on the hob with 2 Tbsp oil for 2 minutes on each side. Remove from the pan.
- Place in casserole dish with mushroom sauce and cook for 20-30 minutes (160°C). Meanwhile, insert simmering basket, weigh in rice and rinse under cold water until water runs clear.
