Ingrediënten

  • whole milk
  • double cream
  • dried meadowsweet
  • egg yolks
  • caster sugar
  • unsalted butter
  • caster sugar
  • ground almonds
  • plain flour
  • quinces

Bereidingswijze

  1. Preheat oven to 170°C and line a baking tray with baking paper.
  2. Place milk, cream and meadowsweet in mixing bowl then heat 2 min/70°C/speed 2.
  3. Add egg yolks and sugar then mix 4 min/80°C/speed 5. Strain through a fine mesh sieve into a shallow freezer-proof container (e.g. aluminium, silicone) up to 4 cm deep, ensuring no meadowsweet remains in the mixture. Cover with reusable wrap or cling film, ensuring it is in contact with the surface of the mixture. Store in fridge until completely cool then place in freezer overnight. Meanwhile, clean mixing bowl.
  4. Place mixing bowl in fridge for approx. 1 hour until very cold. Cut frozen ice cream mixture in pieces (4 cm) with a sharp knife, place in chilled mixing bowl and blend 1 min 30 sec/speed 10. Transfer back to freezer-proof container and set aside in freezer. Clean mixing bowl and place clean mixing bowl back in fridge to chill for approx. 10 minutes. Place a clean, empty freezer-proof container in freezer.
  5. Insert butterfly whisk. Place ice cream mixture in mixing bowl and whisk 2 min/speed 4. Transfer to empty container in freezer, cover and set aside in freezer for at least 2 hours until ready to serve. Meanwhile, continue with recipe.
