Ingrediënten
- fresh red chillies
- garlic cloves
- water
- caster sugar
- white wine vinegar
- limes
- fine sea salt
- fresh coriander
- fresh red chilli
- fresh root ginger
Bereidingswijze
- Place chillies and garlic in mixing bowl then grate 3 sec/speed 8. Scrape down sides of mixing bowl with spatula then grate again 3 sec/speed 8.
- Add water, sugar, vinegar, lime zest, lime juice and salt. Heat 20 min/120°C/speed 1. Transfer to a bowl and set aside to cool. Clean mixing bowl.
- Place coriander in mixing bowl and chop 3 sec/speed 8. Add chilli, ginger and garlic then chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
- Add spring onions, lime zest, soy sauce, sesame oil, cornflour, cumin and palm sugar then mix 5 sec/speed 5.
- Add fish and prawns then chop 3 sec/speed 5.
