Baked Turmeric Fish and Tomato Salsa

Ingrediënten

  • olive oil
  • white fish fillets
  • lime juice
  • fine sea salt
  • macadamia nuts
  • fresh lemon grass
  • fresh makrut lime leaf (optional)
  • shallot
  • ground turmeric
  • ground black pepper

Bereidingswijze

  1. Preheat oven to 180°C. Grease a baking dish with olive oil. Place fish fillets in baking tray and season with lime juice and 1 tsp salt then set aside.
  2. Place macadamia nuts, lemon grass and makrut lime leaf (if using) in mixing bowl then chop 10 sec/speed 10. Scrape down sides of mixing bowl with spatula and chop again 5 sec/speed 10. Scrape down sides of mixing bowl with spatula.
  3. Add shallot, turmeric, pepper, 1 garlic clove, 1 tsp salt and 10 g olive oil in mixing bowl then chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula then chop again 3 sec/speed 7. Spread marinade on top of fish fillets then place in fridge and leave to marinate for 15 minutes. Meanwhile, clean mixing bowl. Continue with recipe.
  4. Place 1000 g water in mixing bowl. Insert simmering basket, weigh rice into it, remove simmering basket and rinse rice thoroughly under cold running water. Insert simmering basket and place Varoma dish in position. Weigh in tomatoes and cover Varoma then steam 16 min/Varoma/speed 4. Meanwhile, bake fish in oven for 15 minutes (180°C). Set Varoma aside and remove simmering basket with aid of spatula. Empty mixing bowl.
  5. Place coriander, chilli (if using), remaining 20 g olive oil, remaining ½ tsp salt and remaining 1 garlic clove in mixing bowl then chop 5 sec/speed 7. Scrape down sides of mixing bowl with spatula then sauté 3 min/120°C/speed 1.
