Batch-Cooking: Warm Vegetable Salad; Tomato and Mushroom Spaghetti; Chicken with Rice and Pepper Sauce

Ingrediënten
- olive oil
- vegetable stock paste, homemade
- fine sea salt
- dried oregano
- bacon lardons (optional)
- fresh button mushrooms
- tinned chopped tomatoes
- water
- chicken thighs, boneless and skinless
- smoked paprika
Bereidingswijze
- Place oil, vegetable stock, salt, oregano, bacon, mushrooms, tomatoes and 400 g water in mixing bowl. Insert simmering basket and weigh in chicken. Season chicken with paprika and salt then drizzle with oil. Mix well with spatula. Place Varoma dish into position with potatoes and vegetables. Insert Varoma tray lined with baking paper moistened with water, then weigh in rice and 300 g water. Season with salt, mix with spatula and distribute evenly. Cover Varoma and start 25 min/Varoma//speed 1. Set Varoma aside. Remove simmering basket with spatula and set aside.
- Add spaghetti and cook Open Cooking/3 min/100°C. Gently press spaghetti down with your hands or spatula. Then, cook time indicated on package/100°C//speed 1 or until al dente. Transfer to a serving bowl.
- Place red peppers, olive oil and orange juice in mixing bowl then mix 10 sec/speed 5. Scrape down sides of mixing bowl using spatula.
- Add butter, paprika, egg yolks and salt then start Thicken /80°C. Meanwhile, place rice and chicken in a bowl and set aside. Transfer vegetables onto a serving dish and season with olive oil, vinegar and salt (see tip). Pour sauce over rice and chicken then mix well with spatula. Use as needed.
