Ingrediënten

  • oil
  • pickled pearl onions
  • stewing steak
  • malt beer
  • water
  • beef stock cube (for 0.5 l)
  • cranberry sauce
  • mustard
  • dried bay leaf
  • fine sea salt

Bereidingswijze

  1. Place oil and onions in mixing bowl then sauté 3 min/120°C//speed 1.
  2. Add 300 g beef, beer, water, beef stock, cranberry sauce, mustard, bay leaf, salt and pepper then Slow Cook /2 h/95°C.
  3. Remove bay leaf. Add celeriac and carrots, mix well with spatula then cook 25 min/100°C//speed .
  4. Mix cornflour and water in a small bowl until dissolved, add to mixing bowl then cook 5 min/100°C//speed . Season to taste and serve hot.
