Ingrediënten

  • fresh mint leaves
  • beetroot
  • cider vinegar
  • apple juice
  • liquid pectin
  • granulated sugar
  • fine sea salt

Bereidingswijze

  1. Place mint leaves in mixing bowl and chop 3 sec/speed 7. Transfer to a bowl and set aside.
  2. Place beetroot in mixing bowl and grate 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  3. Add vinegar, apple juice, pectin, sugar and salt then bring to a rolling boil 45-60 min/Varoma/speed 1 until setting point is reached (see tip). If mixture boils up onto lid, increase to speed 2, and decrease temperature to 95°C. When liquid has settled, return to original settings and repeat as necessary.
