Ingredients
- sugar
- egg whites, from large eggs
- lemon juice
- biscotti
- amaretti cookies
- unsalted butter
- egg yolks
- heavy whipping cream
- corn starch
- brewed coffee
Instructions
- Place sugar into mixing bowl and grind 10 sec/speed 10. Transfer half the ground sugar to a bowl, set aside and leave remaining in mixing bowl.
- Insert butterfly whisk. Add egg whites and lemon juice and mix 6 min/160°F/speed 3.5. Transfer to a bowl and set aside. Remove butterfly whisk.
- Place biscotti and cookies into mixing bowl and grind 10 sec/speed 8.
- Add butter and mix 20 sec/speed 4. Add prepared whipped egg whites and fold in with spatula. Divide between Thermomix® Nester cups and bake for 15-20 minutes (350°F). Clean mixing bowl and butterfly whisk. Remove souffles from oven and set aside to cool for approximately 30 minutes. Meanwhile, prepare the coffee sauce.
- Insert butterfly whisk. Place egg yolks, whipping cream, corn starch, reserved ground sugar and coffee into mixing bowl and mix 5 min/175°F/speed 3.
