Ingredients

  • sugar
  • egg whites, from large eggs
  • lemon juice
  • biscotti
  • amaretti cookies
  • unsalted butter
  • egg yolks
  • heavy whipping cream
  • corn starch
  • brewed coffee

Instructions

  1. Place sugar into mixing bowl and grind 10 sec/speed 10. Transfer half the ground sugar to a bowl, set aside and leave remaining in mixing bowl.
  2. Insert butterfly whisk. Add egg whites and lemon juice and mix 6 min/160°F/speed 3.5. Transfer to a bowl and set aside. Remove butterfly whisk.
  3. Place biscotti and cookies into mixing bowl and grind 10 sec/speed 8.
  4. Add butter and mix 20 sec/speed 4. Add prepared whipped egg whites and fold in with spatula. Divide between Thermomix® Nester cups and bake for 15-20 minutes (350°F). Clean mixing bowl and butterfly whisk. Remove souffles from oven and set aside to cool for approximately 30 minutes. Meanwhile, prepare the coffee sauce.
  5. Insert butterfly whisk. Place egg yolks, whipping cream, corn starch, reserved ground sugar and coffee into mixing bowl and mix 5 min/175°F/speed 3.
