Breaded Celeriac with Herby Yoghurt Sauce

Ingrediënten
- Parmesan cheese
- stale white bread
- water
- celeriac
- plain flour
- fine sea salt
- ground black pepper
- medium eggs
- unsalted butter
- fresh mixed herbs
Bereidingswijze
- Place Parmesan in mixing bowl and grate 20 sec/speed 10.
- Add bread and grate 5 sec/speed 8. Transfer to a bowl and set aside.
- Place water in mixing bowl. Place Varoma dish into position and weigh in celeriac. Divide between Varoma dish and Varoma tray then insert Varoma tray. Cover Varoma then steam 25 min/Varoma/speed 1 until cooked. Set Varoma aside. Discard steaming water and clean and dry mixing bowl.
- Heat butter in a non-stick frying pan on hob over a medium heat. Fry celeriac slices for 2-3 minutes on each side until golden brown then transfer to a plate and set aside.
- Place herbs in mixing bowl and chop 3 sec/speed 8. Scrape down sides of mixing bowl with spatula.
