Ingrediënten

  • double cream
  • milk
  • Parmesan cheese
  • roasted, unsalted cashew nuts
  • fresh spinach leaves
  • garlic clove
  • extra virgin olive oil
  • fine sea salt
  • ground black pepper
  • Parma ham

Bereidingswijze

  1. Insert butterfly whisk. Place cream in mixing bowl and whip 1-2 min/speed 4 until buttermilk separates (see tip). Remove butterfly whisk.
  2. Dice reserved butter. Insert butterfly whisk. Place milk and prepared butter in mixing bowl then whip 2 min/speed 3.5. Spread whipped butter in a thick layer on a chopping board and set aside.
  3. Place Parmesan and cashew nuts in mixing bowl then grind 5 sec/speed 10. Set aside 1 Tbsp for garnishing.
  4. Add spinach, garlic, oil, salt and pepper then blend 20 sec/speed 8. Spoon the pesto onto the butter, creating swirling patterns. Garnish with extra spinach and sprinkle with remaining grated Parmesan mixture. Arrange ham on top then serve the butter board with bread (see tip).
