Butterbean and Feta Burgers

Ingrediënten
- bread
- fresh flat-leaf parsley
- spring onion
- garlic clove
- tinned butter beans
- lemon juice
- plain flour
- ground cumin
- fine sea salt
- medium egg
Bereidingswijze
- Place bread in mixing bowl and grind 5 sec/speed 7. Transfer to a large bowl and set aside.
- Place parsley, spring onion and garlic in mixing bowl then chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula.
- Add butterbeans, lemon juice, flour, cumin, salt and egg then blend 5 sec/speed 7. Transfer to bowl with breadcrumbs.
- Add feta to breadcrumb mixture and stir in with spatula. Tip out and and shape into 4 equal-sized patties. Place on a plate, cover with cling film and place in fridge for 1 hour. Towards the end of this time, light barbecue or preheat grill (220°C)
- Cook burgers on barbecue or under grill (220°C) until completely browned on one side (approx. 6-8 minutes). Carefully loosen from grill bars using a palette knife or spatula then flip over and cook other side until golden brown and cooked through. Serve in burger buns with coleslaw and chips if desired.
