Ingrediënten

  • self-raising flour
  • caster sugar
  • baking powder
  • unsalted butter
  • large eggs
  • vanilla extract
  • water
  • raspberry jam
  • icing sugar

Bereidingswijze

  1. Preheat oven to 190°C and line 2 x 12 hole bun tins with paper fairy cake cases.
  2. Place flour, sugar and baking powder in mixing bowl then mix 5 sec/speed 4.
  3. Add butter, eggs, vanilla extract and hot water then mix 15 sec/speed 4. Scrape down sides of mixing bowl with spatula then mix again 10 sec/speed 4.
  4. Divide mixture between cases up to ⅔ full then bake for 12-14 minutes (170°C) until risen and golden.
  5. Leave in trays for 5 minutes before transferring to a wire rack to cool completely.
