Ingrediënten

  • unsalted butter
  • brown sugar
  • medium eggs
  • strong brewed coffee
  • liquid caramel
  • self-raising flour
  • baking powder
  • caster sugar
  • unsalted butter
  • milk

Bereidingswijze

  1. Preheat oven to 180°C. Line bases of 3 sandwich cake tins (Ø 18 cm) with baking paper, then grease with butter.
  2. Place butter and brown sugar in mixing bowl then cream 3 min/speed 4.
  3. Insert butterfly whisk. Add eggs and whisk 4 min/speed 4.
  4. Around butterfly whisk, add coffee, liquid caramel, flour and baking powder then mix 5 sec/speed 3.5.
  5. Divide cake batter between prepared tins (approx. 320 g per tin, see tip). Place cake tins in oven, two on the top rack and one on the middle rack and bake for 18-20 minutes (180°C) until a skewer inserted in centre comes out clean. About halfway through baking, rotate the cake from the middle rack to the top rack and move one from the top to the middle. Leave cakes to cool for 5 minutes before removing from tins. Leave to cool completely (approx. 50 minutes) on a wire rack before filling (see tip). Meanwhile, clean and dry mixing bowl.
