Ingrediënten

  • unsalted butter
  • red onions
  • light brown sugar
  • balsamic vinegar
  • filo pastry
  • soft goat's cheese
  • fresh thyme

Bereidingswijze

  1. Place 20 g butter in mixing bowl and melt 1 min 30 sec/50°C/speed . Transfer to a bowl and set aside.
  2. Place onions, remaining 25 g butter, sugar and balsamic vinegar in mixing bowl then cook 20-30 min/120°C//speed  until onions are soft.
  3. Preheat oven to 180°C. Place 1 sheet of filo pastry on a chopping board, keeping the rest covered with a damp tea towel. Brush lightly with reserved melted butter then cut into squares (approx. 6 cm). Press 3 squares of pastry into each hole of a 24 hole mini muffin tin, alternating the angle of each layer. Repeat with remaining pastry. Bake for 3-5 minutes (180°C) until edges are lightly golden.
  4. Add 1-2 tsp caramelised onions to each filo case then top with a piece of goat's cheese and a few thyme leaves. Bake for a further 2-3 minutes (180°C) until goat's cheese is slightly melted. Serve warm or cold.
