Carrot and Sesame Burgers

Ingrediënten
- stale bread
- fresh parsley leaves
- lemon
- carrots
- olive oil
- fine sea salt
- ground black pepper
- tinned chickpeas
- red onion
- smoked paprika
Bereidingswijze
- Place bread, parsley and lemon peel in mixing bowl then grate 20 sec/speed 10. Transfer to a bowl and set aside.
- Place carrots in mixing bowl and grate 8 sec/speed 5. Set scales to zero, remove 200 g (scales will show -200 g) and set aside.
- Add oil, salt and pepper then, with simmering basket in place of measuring cup, sauté 4 min/120°C/speed 1. Transfer to a bowl and set aside.
- Place chickpeas, onion, reserved raw carrots, paprika, cumin and egg in mixing bowl then blend 10 sec/speed 8. Scrape down lid and sides of mixing bowl with spatula then blend again 10 sec/speed 8. Scrape down lid and sides of mixing bowl with spatula.
- Add sesame seeds, reserved cooked carrots and reserved breadcrumbs then mix 20 sec//speed 4. Finish mixing with spatula if necessary. Shape the mixture into 6 equal-sized patties, transfer to a large plate or baking tray and refrigerate for at least 30 minutes or until firm. Meanwhile, clean mixing bowl and make tahini sauce.
