Chilled Chocolate Orange Tart

Ingrediënten
- unsalted butter
- digestive biscuits
- granulated sugar
- orange
- double cream
- fine sea salt
- dark chocolate (70% cocoa solids)
Bereidingswijze
- Place butter in mixing bowl and melt 4 min/40°C/speed 1.
- Add digestives, chop 2 sec/speed 6 then mix 5 sec/speed 4. Transfer to prepared tin and press down with the back of a spoon forming a firm biscuit layer. Set aside in fridge to chill.
- Place sugar and orange peel in mixing bowl then grind 20 sec/speed 10.
- Insert butterfly whisk. Add cream, orange juice and salt then heat 5 min/80°C/speed 1.
- Add chocolate and melt 4 min/60°C/speed 1. Remove butterfly whisk. Transfer to tin on top of biscuit base, cover with reusable wrap or cling film then chill in fridge until set (approx. 6 hours or overnight).
