Ingrediënten
- unsalted butter
- light brown sugar
- golden syrup
- self-raising flour
- cocoa powder
- cornflour
- water
- fine sea salt
- unsalted butter

Bereidingswijze
- Preheat oven to 170°C and line 2 baking trays with baking paper.
- Place butter, sugar and golden syrup in mixing bowl then cream 30 sec/speed 4.
- Add flour, cocoa powder, cornflour, water and salt then mix 20 sec/speed 6. Scrape down sides of mixing bowl with spatula then mix again 20 sec/speed 6, adding up to 1 Tbsp more water if dough does not start to come together.
- Tip out onto work surface and bring together into a ball. Roll out between two pieces of cling film until 4-5 mm thick. Cut out rectangles (approx. 6 cm x 3 cm) using a sharp knife or pastry cutter, then use a palette knife to transfer biscuits to prepared baking trays, placing at least 2 cm apart.
- Use a skewer to make shallow holes along the top of each biscuit (2 rows of 5 is traditional). Bake for 10-12 minutes (170°C). Leave on trays for 5 minutes before transferring to a wire rack to cool and harden. Meanwhile, clean mixing bowl and prepare filling.
