Ingrediënten

  • whole milk
  • dried instant yeast
  • unsalted butter
  • strong white bread flour
  • cocoa powder, unsweetened
  • fine sea salt
  • caster sugar
  • eggs
  • icing sugar

Bereidingswijze

  1. Place milk and yeast in mixing bowl then warm 2 min/37°C/speed 1. Meanwhile, grease a large bowl with butter.
  2. Add flour, cocoa, salt, sugar, egg and butter then knead Dough /5 min. Transfer to prepared bowl and cover with cling film. Leave to prove in a warm place until doubled in size (approx. 1 hour).
  3. When dough has proved, divide in two, transfer each piece to a baking tray then flatten to 2 cm. Cover with cling film and refrigerate for 2 hours to stiffen the dough. Meanwhile, generously grease and flour 2 loaf tins (900 g/2 lb).
  4. Shape each piece of dough and place in prepared tins. Cover with oiled cling film and set aside in a warm place until doubled in size (approx. 1 hour). Towards the end of this time, preheat oven to 200°C.
  5. When risen, bake loaves for 20 minutes (200°C). Turn out onto a wire rack, cool then lightly dust with icing sugar.
