Ingrediënten

  • fine sea salt
  • eggs
  • sugar
  • unsalted butter
  • dark chocolate
  • plain flour

Bereidingswijze

  1. Preheat oven to 200°C. Grease a springform tin (Ø 22 cm) and set aside.
  2. Insert butterfly whisk. Place egg whites and salt in mixing bowl and whisk 6 min/speed 3.5 or until stiff.
  3. Add 20 g sugar and mix 20 sec/speed 3.5. Remove butterfly whisk. Transfer to a bowl and set aside.
  4. Place remaining 180 g sugar, egg yolks and butter in mixing bowl and mix 6 min/70°C/speed 4.
  5. Add dark chocolate, wait a few seconds for chocolate to soften, then mix 20 sec/speed 5.
