Ingredients

  • sugar
  • water
  • egg yolk
  • dark chocolate

Instructions

  1. Insert butterfly whisk in mixing bowl, add cream and whisk until the cream is whipped, or about 12-15 seconds speed 3.5. Stop whipping when reaching stiff peaks. Transfer to a bowl and refrigerate. Do not clean mixing bowl.
  2. Place sugar and water in mixing bowl, cook 10 min/100°C/speed 2.
  3. Add egg yolks, mix 1 min/speed 4. Then cook 2 min/70°C/speed 4.
  4. Place 350 g dark chocolate in mixing bowl, grate 15 sec/speed 7. Transfer to a bowl.
  5. Place 300 g grated chocolate back in mixing bowl, melt 4 min/50°C/speed 2.
