Chocolate Lava Cake with Mocha Ice Cream

Ingrediënten
- raw cashew nuts
- coconut milk
- unsweetened cocoa powder
- coconut sugar
- agave syrup
- natural vanilla extract
- instant espresso powder
- fine sea salt
- vegan dark chocolate
- coconut butter
Bereidingswijze
- Place cashew nuts, coconut milk, cocoa powder, sugar, agave syrup, vanilla extract, espresso powder and salt in mixing bowl then blend 1 min/speed 5-10, increasing speed gradually. Scrape down sides of mixing bowl with spatula then blend again 30 sec/speed 8. Transfer to a freezer-proof container and freeze for 8 hours or overnight. Meanwhile, clean mixing bowl.
- Place chocolate in mixing bowl and chop 5 sec/speed 7. Scrape down sides of mixing bowl with spatula.
- Add coconut butter and sugar then heat 6 min/50°C/speed 3.
- Add eggs, cornflour and rice flour then mix 30 sec/speed 4. Transfer to prepared ramekins, then freeze for 90 minutes. Meanwhile, preheat oven to 200°C.
- Bake for 8-10 minutes (200°C) until firm to touch. Meanwhile, remove ice cream from freezer and leave at room temperature for 5 minutes before serving.
