Ingrediënten

  • raw cashew nuts
  • coconut milk
  • unsweetened cocoa powder
  • coconut sugar
  • agave syrup
  • natural vanilla extract
  • instant espresso powder
  • fine sea salt
  • vegan dark chocolate
  • coconut butter

Bereidingswijze

  1. Place cashew nuts, coconut milk, cocoa powder, sugar, agave syrup, vanilla extract, espresso powder and salt in mixing bowl then blend 1 min/speed 5-10, increasing speed gradually. Scrape down sides of mixing bowl with spatula then blend again 30 sec/speed 8. Transfer to a freezer-proof container and freeze for 8 hours or overnight. Meanwhile, clean mixing bowl.
  2. Place chocolate in mixing bowl and chop 5 sec/speed 7. Scrape down sides of mixing bowl with spatula.
  3. Add coconut butter and sugar then heat 6 min/50°C/speed 3.
  4. Add eggs, cornflour and rice flour then mix 30 sec/speed 4. Transfer to prepared ramekins, then freeze for 90 minutes. Meanwhile, preheat oven to 200°C.
  5. Bake for 8-10 minutes (200°C) until firm to touch. Meanwhile, remove ice cream from freezer and leave at room temperature for 5 minutes before serving.
