Ingrediënten

  • sugar
  • dark chocolate
  • cream, min. 30% fat
  • eggs
  • salt

Bereidingswijze

  1. Place sugar in mixing bowl and grind 10 sec/speed 10. Scrape down sides of mixing bowl using spatula.
  2. Add dark chocolate and cream and melt 4 min/50°C/speed 2.
  3. Add egg yolks to mixing bowl and mix 15 sec/speed 4. Transfer mixture to a medium size bowl and set aside. Clean and dry mixing bowl thoroughly.
  4. Insert butterfly whisk. Place egg whites and salt in mixing bowl and whisk 3 min/speed 3.5 or until stiff. Remove butterfly whisk, then add whisked egg whites to reserved chocolate mixture and carefully fold in using spatula. Pour into 6 individual dessert bowls and refrigerate for at least 3 hours before serving.
