Ingrediënten
- dark chocolate
- double cream
- orange liqueur
- large eggs
- sugar
- orange
Bereidingswijze
- Place chocolate in mixing bowl and grind 5 sec/speed 7. Scrape down sides of mixing bowl with spatula.
- Add 50 g cream and mix 10 sec/speed 4. Scrape down sides of mixing bowl with spatula then melt 4 min/50°C/speed 2.
- Add remaining 150 g cream, orange liqueur and egg yolks then mix 15 sec/speed 4. Transfer to a bowl and set aside, then thoroughly clean and dry mixing bowl.
- Place sugar in mixing bowl and grind 10 sec/speed 10.
- Insert butterfly whisk. Add egg whites and whisk 3 min 30 sec/speed 4 until stiff peaks. Add ⅓ mixture to chocolate mixture and fold in with spatula. Add remaining whisked egg white mixture and fold in with spatula.
