Ingrediënten
- whole milk
- egg yolks
- caster sugar
- clotted cream (55 % fat)
- fresh strawberries
Bereidingswijze
- Place milk and egg yolks in mixing bowl then cook 4 min/80°C/speed 6.
- Add sugar and cream then cook 2 min/80°C/speed 4.
- Pour mixture, up to 4 cm deep, into shallow freezable containers and leave to cool for 30 minutes. Refrigerate for 12 hours to allow mixture to mature then place in freezer until solid (approx. 10 hours).
- Before serving, remove ice cream from freezer and cut into 3 cm pieces. Place ice cream pieces in mixing bowl, crush 20 sec/speed 6 then churn 10 sec/speed 4.
- Add strawberries and mix 5 sec/speed 3. Serve immediately or freeze until required.
