Ingrediënten

  • chicken stock paste, homemade
  • water
  • light soy sauce
  • mirin
  • fine sea salt
  • frozen edamame beans
  • dried soba noodles
  • toasted sesame seeds

Bereidingswijze

  1. Place chicken stock and 240 g water in mixing bowl then, with simmering basket in place of measuring cup, heat 4 min/100°C/speed 1.
  2. Add soy sauce and mirin then mix 10 sec/speed 4. Divide between 4 serving bowls and set aside to cool. Meanwhile, continue with recipe.
  3. Place remaining 800 g water and salt in mixing bowl then, with simmering basket in place of measuring cup, bring to the boil 10 min/100°C/speed 1.
  4. Insert simmering basket, weigh in edamame then cook 5 min/100°C/speed 4. Remove simmering basket with aid of spatula, transfer edamame to a bowl and set aside to cool. Meanwhile continue with recipe.
  5. Add noodles, ensuring they are evenly distributed around the bowl, and, with simmering basket in place of measuring cup, cook time indicated on packet 98°C//speed . Drain in Varoma dish and rinse under cold, running water then divide between serving plates. Sprinkle with sesame seeds then serve with the edamame and dipping sauce.
