Ingrediënten

  • brown rice
  • cashew nuts
  • olive oil
  • onions
  • courgettes
  • garlic cloves
  • fresh basil
  • liquid vegetable stock
  • fresh mint leaves
  • fine sea salt

Bereidingswijze

  1. Place rice and cashews in mixing bowl and grind 10 sec/speed 10. Transfer to a bowl and set aside.
  2. Place oil, onions, courgettes, garlic and basil stalks in mixing bowl and chop 5 sec/speed 6. Scrape down sides of mixing bowl with spatula then sauté 7 min/100°C/speed 1.5.
  3. Add prepared rice-cashew mixture and stock and cook 5 min/100°C/speed 1.
  4. Add basil leaves, mint leaves, salt and pepper and blend 1 min/speed 9. Pour into bowls, garnish with mint then serve.
