- brown rice
- cashew nuts
- olive oil
- onions
- courgettes
- garlic cloves
- fresh basil
- liquid vegetable stock
- fresh mint leaves
- fine sea salt
Bereidingswijze
- Place rice and cashews in mixing bowl and grind 10 sec/speed 10. Transfer to a bowl and set aside.
- Place oil, onions, courgettes, garlic and basil stalks in mixing bowl and chop 5 sec/speed 6. Scrape down sides of mixing bowl with spatula then sauté 7 min/100°C/speed 1.5.
- Add prepared rice-cashew mixture and stock and cook 5 min/100°C/speed 1.
- Add basil leaves, mint leaves, salt and pepper and blend 1 min/speed 9. Pour into bowls, garnish with mint then serve.
