Ingrediënten

  • fresh coriander leaves
  • fresh parsley leaves
  • onion
  • lamb shoulder
  • ground black pepper
  • fine sea salt
  • olive oil
  • carrots
  • turnip
  • ground cinnamon

Bereidingswijze

  1. Place coriander and parsley in mixing bowl then chop 7 sec/speed 8. Transfer to a bowl and set aside.
  2. Place onions in mixing bowl and chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  3. Add lamb, pepper, 2 tsp salt and 40 g oil then cook 10 min/120°C//speed .
  4. Add carrots, turnip, cinnamon, ginger, reserved chopped herbs and 500 g water then cook 15 min/120°C//speed .
  5. Add courgettes, raisins, chickpeas and saffron then cook 15 min/100°C//speed . Meanwhile, place a bowl on mixing bowl lid and weigh in couscous, boiling water, remaining 1 tsp salt and remaining 20 g oil. Transfer lamb and vegetables to deep plates. Cover with sauce and serve with couscous.
