Couscous with Lamb and Vegetables

Ingrediënten
- fresh coriander leaves
- fresh parsley leaves
- onion
- lamb shoulder
- ground black pepper
- fine sea salt
- olive oil
- carrots
- turnip
- ground cinnamon
Bereidingswijze
- Place coriander and parsley in mixing bowl then chop 7 sec/speed 8. Transfer to a bowl and set aside.
- Place onions in mixing bowl and chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula.
- Add lamb, pepper, 2 tsp salt and 40 g oil then cook 10 min/120°C//speed .
- Add carrots, turnip, cinnamon, ginger, reserved chopped herbs and 500 g water then cook 15 min/120°C//speed .
- Add courgettes, raisins, chickpeas and saffron then cook 15 min/100°C//speed . Meanwhile, place a bowl on mixing bowl lid and weigh in couscous, boiling water, remaining 1 tsp salt and remaining 20 g oil. Transfer lamb and vegetables to deep plates. Cover with sauce and serve with couscous.
