Crab Tart

Ingrediënten
- black peppercorns
- Parmesan cheese
- plain flour
- unsalted butter
- egg yolk
- fine sea salt
- plain flour
- large eggs
- egg yolks
- double cream
Bereidingswijze
- Place peppercorns in mixing bowl and grind 10 sec/speed 10.
- Add Parmesan and grate 15 sec/speed 8.
- Add flour, butter, egg yolk and salt then chop Turbo/2.0 sec/5-8 times until clinging together. Tip out and form a disc about 3 cm thick, wrap in cling film then chill for 30 minutes.
- Roll chilled pastry out on a lightly floured surface into a circle approx. Ø 30 cm. Line a fluted, loose-bottomed tart tin (Ø 28 cm) with pastry, pressing in well then trim edges with a knife. Prick base with a fork then place in fridge to rest for 30 minutes. Meanwhile, preheat oven to 180°C.
- Line pastry with greaseproof paper and fill with baking beans then bake blind for 20 minutes (180°C). Remove beans and paper then bake for a further 10 minutes (180°C). Leave in tin to cool on a wire rack.
