Creamy Risottata with Squash, Scamorza and Pecorino

Ingrediënten
- Scamorza cheese
- pecorino
- onion
- celery
- carrot
- olive oil
- butternut squash
- water
- vegetable stock cubes (for 0.5 l each)
- ground cinnamon
Bereidingswijze
- Place Scamorza and pecorino in mixing bowl then chop 10 sec/speed 7. Transfer to a bowl and set aside.
- Place onion, celery, carrot and oil in mixing bowl then chop 5 sec/speed 7. Scrape down sides of mixing bowl with spatula and sauté 5 min/120°C/speed 2.
- Add squash, water, vegetable stock, cinnamon and pepper then mix 10 sec/speed 5. Cook 15 min/110°C/speed 1.
- Add pasta and cook Open Cooking/4 min/100°C. Gently press pasta down with your hands or spatula. Cook 9 min/100°C//speed 1. Leave to rest for 5 minutes in mixing bowl. Transfer to a serving dish and serve sprinkled with reserved grated cheeses.
