Ingrediënten

  • white bread, slightly stale
  • water
  • large eggs
  • fine sea salt
  • light soy sauce
  • light brown sugar
  • ground ginger
  • garlic powder
  • water, hot
  • cornflour

Bereidingswijze

  1. Place bread in mixing bowl and chop 4 sec/speed 8. Transfer to a plate and set aside.
  2. Place 1000 g water in mixing bowl and start Kettle /100°C.
  3. Add eggs and start  Open Cooking/25 min/70°C. Remove eggs from mixing bowl and set aside.
  4. Crack each egg very carefully onto the plate with breadcrumbs and season with salt. Very carefully, completely cover each egg with breadcrumbs and leave to rest for 30-60 minutes until they form a crust. Meanwhile continue with recipe.
  5. Place soy sauce, sugar, ginger, 1 tsp garlic powder and remaining 260 g water in mixing bowl then cook 10 min/85°C/speed 2.
