Ingrediënten
- water
- unsalted butter
- fine sea salt
- caster sugar
- plain flour
- medium eggs
- caster sugar
- oranges
- milk
- cornflour
Bereidingswijze
- Place water, butter, salt and sugar in mixing bowl then heat 5 min/98°C/speed 1.
- Add flour and mix 20 sec/speed 4. Keep mixing bowl in place and allow to cool until it reaches 70°C (approx. 10 minutes).
- Add eggs and mix 1 min 30 sec/speed 5.
- Preheat oven to 200°C. Line 2 baking trays with baking paper and set aside.
- Transfer half pastry mixture to a piping bag with a Ø 10 mm plain nozzle and pipe approx. 30 balls (Ø 3.5 cm) onto 1 prepared baking tray, leaving 3 cm space between them. With a wet finger, lightly press down the swirl at the top of each puff. Transfer remaining pastry mixture to piping bag and pipe mixture onto second prepared baking tray. Bake for 20-25 minutes (200°C) until golden brown.
