Ingrediënten

  • coarse salt flakes
  • red cabbage
  • red wine
  • sherry vinegar
  • sumac
  • black peppercorns
  • star anise
  • clove
  • dried bay leaf
  • celeriac

Bereidingswijze

  1. Place cabbage and salt in mixing bowl then chop 1 sec/speed 6. Scrape down sides of mixing bowl with spatula then mix 20 sec//speed 2.5. Transfer to warm glass jars with airtight lids (see tip), leaving approx. 5 mm gap at the top. Make sure that rims of jars are clean and close immediately. Leave cabbage for 4 days until slightly fermented (see tip), checking every day, letting out some gas. Clean mixing bowl.
  2. Place wine, vinegar, sumac, peppercorns, star anise, clove and bay leaf in mixing bowl. Place Varoma dish without lid on mixing bowl lid then heat 3 min/120°C/speed 0.5.
  3. Add reserved cabbage and, without measuring cup, cook 10 min/120°C/speed  or until soft. Drain cabbage in simmering basket over a bowl, reserving cooking liquid. Transfer cabbage to a bowl and set aside. Clean mixing bowl.
  4. Place celeriac, milk, cream and salt in mixing bowl then, with simmering basket in place of measuring cup, cook 22 min/100°C/speed 0.5. Insert measuring cup then blend Blend /3 min. Transfer to a bowl and keep warm. Clean mixing bowl.
  5. Place 1500 g water and salt in mixing bowl then mix 1 min/speed 4.
