Easter Cream Pastries

Ingrediënten
- water
- unsalted butter
- fine sea salt
- sugar
- plain flour
- medium eggs
- double cream
- sour cream
- sugar
- natural vanilla extract
Bereidingswijze
- Preheat oven to 200°C and line 2 baking trays with baking paper or silicone baking mats.
- Place water, butter, salt and sugar in mixing bowl then, with simmering basket in place of measuring cup, cook 5 min/100°C/speed 1.
- Add flour and mix 20 sec/speed 4. Remove mixing bowl and leave to cool for 10 minutes.
- Place mixing bowl back into position, add eggs and mix 1 min/speed 5.
- Transfer mixture to a piping bag fitted with a small piping nozzle (see tip). Pipe 10 discs (Ø 10 cm) on prepared trays, leaving 5 cm between each. Pipe an extra layer on edge of each disc, forming a raised rim then flatten centre of each with the back of a wet spoon. Bake for 15-20 minutes (200°C) until golden brown. Meanwhile, clean and dry mixing bowl.
