Ingrediënten

  • ice cubes
  • unsalted butter
  • plain flour
  • fine sea salt
  • water
  • unsalted butter
  • dark brown sugar
  • currants
  • ground allspice
  • ground nutmeg

Bereidingswijze

  1. Place ice cubes, butter, flour and salt in mixing bowl then chop 7 sec/speed 7.
  2. Add water and knead Dough /3 min. Tip out and form into a flattened ball, then wrap in cling film and refrigerate for 30 minutes until firm.
  3. On a lightly floured surface, roll out dough into a rectangle (approx. 60 cm x 20 cm). Fold bottom third of dough up then fold top third down and seal edges gently with rolling pin. Give folded dough a quarter turn so that fold is on the left. Repeat rolling and folding process twice more, then return to fridge for 20 minutes (or place in freezer for 5 minutes). Meanwhile, preheat oven to 200°C, clean and dry mixing bowl then make filling.
  4. Place butter and sugar in mixing bowl then melt 2 min/80°C/speed 2.
  5. Add currants, allspice and nutmeg then mix 10 sec//speed 2.
