Ingrediënten
- Parmesan cheese
- fennel bulb
- unsalted butter
- water
- fine sea salt
- dry white wine
- Carnaroli rice
- chicken stock
Bereidingswijze
- Place Parmesan and fennel leaves in mixing bowl then chop 25 sec/speed 8. Transfer to a bowl and set aside.
- Place sliced fennel, 20 g butter, water and 1 pinch salt in mixing bowl then cook 10 min/100°C//speed 0.5. Remove half of the fennel and juices then set aside, leaving remainder in the bowl.
- Add wine, rice and butter then cook 3 min/100°C//speed 1. Scrape base of mixing bowl with spatula to loosen rice.
- Add hot stock and remaining 1 pinch salt then cook 13 min/100°C//speed 1.
