Ingrediënten

  • Parmesan cheese
  • fennel bulb
  • unsalted butter
  • water
  • fine sea salt
  • dry white wine
  • Carnaroli rice
  • chicken stock

Bereidingswijze

  1. Place Parmesan and fennel leaves in mixing bowl then chop 25 sec/speed 8. Transfer to a bowl and set aside.
  2. Place sliced fennel, 20 g butter, water and 1 pinch salt in mixing bowl then cook 10 min/100°C//speed 0.5. Remove half of the fennel and juices then set aside, leaving remainder in the bowl.
  3. Add wine, rice and butter then cook 3 min/100°C//speed 1. Scrape base of mixing bowl with spatula to loosen rice.
  4. Add hot stock and remaining 1 pinch salt then cook 13 min/100°C//speed 1.
