Fried Masa (Fermented Rice Pancake)

Ingrediënten
- jasmine rice
- water
- water
- white onion (optional)
- yoghurt
- fresh root ginger
- caster sugar
- fine sea salt
- dried instant yeast
- baking powder
Bereidingswijze
- Place remaining 25 g rice and 400 g water in mixing bowl then cook 15 min/100°C//speed . Drain rice in simmering basket and run rice under cold running water to stop cooking. Transfer to fridge until required. Clean mixing bowl.
- After soaking time has elapsed, drain rice in simmering basket. Place soaked rice, cooked rice, onion (if using, see variation), yoghurt, ginger sugar, salt, yeast and remaining 60 g water in mixing bowl then blend 45 sec/speed 4. Scrape down sides of mixing bowl with spatula then blend again 30 sec/speed 10. Start Fermentation /2 h/37°C.
- Insert butterfly whisk. Add baking powder and water then mix 2 min/speed 3.
- Heat oil in a non-stick frying pan or aebleskiver pan over a medium heat then pour small circles of batter in pan to create small pancakes. Fry for 45 seconds until lightly golden brown then flip and cook for a further 45 seconds until cooked through. Transfer to a wire rack and repeat with remaining batter. Serve with honey and fruit, for example.
