Gluten-free Chocolate Cake with Nuts

Ingrediënten
- medium eggs
- blanched almonds
- walnuts, halved
- hazelnuts, with skin
- cocoa powder
- sugar
- unsalted butter
- icing sugar
- cocoa powder
- hazelnut paste
Bereidingswijze
- Preheat oven to 170°C then grease and line a springform cake tin (Ø 26 cm). Separate egg yolks and whites and set aside in 2 bowls.
- Insert butterfly whisk. Place egg whites in mixing bowl and whisk 2 min 30 sec/speed 3.5. Remove butterfly whisk. Transfer to a bowl and set aside. Clean and dry mixing bowl.
- Place almonds, walnuts, hazelnuts, cocoa powder and sugar in mixing bowl then grind 15 sec/speed 10.
- Add butter and egg yolks then mix 30 sec/speed 3. Scrape down sides of mixing bowl with spatula then mix again 30 sec/speed 3 Transfer to a large bowl.
- Pour mixture into prepared cake tin and bake for 30-40 minutes (170°C) until a skewer inserted in the centre comes out clean. Allow to cool in tin before transferring to a wire rack. Meanwhile, clean and dry mixing bowl then make hazelnut cream.
