Ingrediënten

  • olive oil
  • red onions
  • soft brown sugar
  • fine sea salt
  • red wine vinegar
  • fresh mushrooms
  • fresh baby spinach
  • medium eggs
  • milk
  • fresh chives

Bereidingswijze

  1. Add brown sugar, red wine vinegar and 1 tsp salt then cook 25 min/120°C//speed 0.5. Transfer to a bowl and set aside. Clean and dry mixing bowl.
  2. Place 20 g oil and mushrooms in mixing bowl then sauté 7 min/120°C//speed 1. Meanwhile, line Varoma tray with baking paper, making sure that the steam slots at the top remain free and are not covered by the baking paper (see tip) then set aside.
  3. Add 75 g spinach and mix well with spatula then sauté 3 min/120°C//speed 2. Drain in simmering basket then transfer to prepared Varoma tray, distribute well and set aside. Clean and dry mixing bowl.
  4. Place eggs, milk, chives, pepper and 1 tsp salt in mixing bowl then mix 20 sec/speed 5. Pour mixture over spinach and mushrooms on Varoma tray, sprinkle with goat's cheese and close Varoma, then set aside.
  5. Place water in mixing bowl, set Varoma in position and steam 15 min/Varoma//speed 1. Meanwhile, heat butter and garlic in a frying pan on medium heat. Fry baguette slices, cut side down, until golden brown. Set aside. Fry bacon slices until golden brown. Drain on paper towel and set aside. Set Varoma aside and cut frittata in triangles.
