Ingrediënten

  • gingernut biscuits
  • fresh gooseberries
  • caster sugar
  • double cream

Bereidingswijze

  1. Place gingernut biscuits in mixing bowl and grind 10 sec/speed 10. Transfer to a bowl and set aside.
  2. Place gooseberries and 120 g sugar in mixing bowl then cook 10 min/100°C/speed 1. Transfer to a sieve set over a bowl then set aside to cool and drain. Meanwhile, wash and dry mixing bowl.
  3. Place 30 g sugar in mixing bowl and grind 15 sec/speed 10.
  4. Insert butterfly whisk. Add cream and whisk 40 sec/speed 3 until soft peaks form. If necessary, whip again speed 3, stopping the motor and checking every 5-10 seconds until soft peaks form, avoiding over-whipping.
  5. Add reserved cooled gooseberries and 1 Tbsp reserved strained juice to mixing bowl then fold in 10 sec/speed 1.5.
