Greek-style Baked Cod with Bulgur Wheat

Ingrediënten
- cod fillets, skinless
- fine sea salt
- ground black pepper
- lemon
- fresh parsley leaves
- onions
- olive oil
- garlic cloves
- tinned chopped tomatoes
- sweet paprika
Bereidingswijze
- Grease 'Betty' stoneware casserole dish (see tip). Place cod in prepared dish in a single layer, season with 1 tsp salt and ½ tsp pepper, pour over lemon juice, then place in fridge for 20 minutes. Meanwhile, continue with recipe.
- Place parsley in mixing bowl and chop 5 sec/speed 7. Transfer to a bowl and set aside.
- Add garlic and sauté 2 min/120°C//speed .
- Add tomatoes, wine, paprika, cinnamon, tomato purée, 25 g reserved chopped parsley, ½ tsp salt and ½ tsp pepper then cook 10 min/120°C/speed 2. Meanwhile, preheat oven to 200°C.
- Remove baking dish from refrigerator. Pour tomato sauce evenly over the fish then top with olives. Cover 'Betty' casserole dish with lid and bake for 30 minutes (200°C) or until cooked. Meanwhile, cook bulgar wheat.
