Ingrediënten

  • unsalted butter
  • plain flour
  • medium eggs
  • caster sugar
  • vanilla bean paste (optional)
  • plain flour
  • baking powder
  • fine sea salt
  • green food colouring gel
  • water

Bereidingswijze

  1. Preheat oven to 180°C. Grease 2 springform tins (Ø 18 cm) with butter, dust with flour and set aside.
  2. Insert butterfly whisk. Place eggs, sugar and vanilla paste in mixing bowl then heat 6 min/37°C/speed 4, then whisk 6 min/speed 4.
  3. Add flour, baking powder and salt then mix 5 sec/speed 3. Remove butterfly whisk. Mix well with spatula. Divide batter equally between 4 bowls.
  4. Add a few drops of food colouring to each bowl, increasing the amount to obtain 4 shades of green of differing intensity (see tip). Transfer first 2 portions of batter to prepared tins and bake for 15-18 minutes (180°C). Set aside to cool for approx. 5 minutes. Remove from tins, transfer to a wire rack and leave to cool completely. Meanwhile, transfer remaining 2 batter portions into tins and bake for 15-18 minutes (180°C). Leave to cool completely. Clean mixing bowl.
  5. Insert butterfly whisk. Place 250 g mascarpone, 250 g cream and 25 g icing sugar in mixing bowl then whip 1 min/speed 3. If necessary, whip again speed 3, stopping the motor and checking every 5-10 seconds until soft peaks form, avoiding over-whipping. Remove butterfly whisk. Transfer to a large bowl.
