Ingrediënten
- honey
- ground black pepper
- fine sea salt
- sweet paprika
- garlic clove
- lime
- chicken supremes, skinless
- fresh coriander
- lime zest
- garlic cloves
Bereidingswijze
- Place honey, pepper, salt, sweet paprika, garlic, lime zest and 20 g lime juice in mixing bowl then blend 30 sec/speed 8.
- Place chicken in a bowl and drizzle marinade over it, stir to coat then cover and allow to marinate for 30 minutes in fridge. Meanwhile, line Varoma tray with baking paper with enough to go 2 cm up the sides. Insert Varoma tray in Varoma dish. Clean and dry mixing bowl and continue with recipe.
- Place coriander and approx. 50 g lime zest in mixing bowl then chop 10 sec/speed 8. Reserve 1-2 tsp coriander-lime zest mixture in a small bowl.
- Add garlic, onions, red peppers and jalapeño chillies then chop 5 sec/speed 5.
- Add mangoes, salt, sugar, 70 g lime juice and water. Arrange marinated chicken on lined Varoma tray, set covered Varoma into position and cook 28 min/Varoma//speed 1, until chicken is thoroughly cooked. Set covered Varoma aside on a plate to keep warm. Transfer 450 g mango chutney to a glass jar with screw-top lid (see tip), leaving approx. 5 mm. Make sure that the rim of the jar is clean and close immediately. Leave to cool completely and store in fridge or freezer (see tip). Transfer remaining mango chutney to a wide serving dish and allow to cool for a few minutes until lukewarm.
