Ingredients
- unsalted butter
- crystallised ginger
- dark brown sugar
- golden syrup
- milk
- egg
- self-raising flour
- ground ginger
- bicarbonate of soda
- sea salt
Instructions
- Place crystallised ginger into mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula.
- Add butter, sugar and golden syrup and cook 2 min/98°C/speed 1. Scrape down sides of mixing bowl with spatula.
- Add milk, egg, flour, ginger, bicarb soda and salt, then mix 30 sec/speed 4. Transfer between prepared nester and cover with baking paper. Rinse mixing bowl.
- Place water into mixing bowl. Place Varoma dish into position, insert Varoma tray and place nester onto it. Secure Varoma lid and steam 18 min/Varoma/speed 4. Serve warm or cooled drizzled with caramel syrup and custard, fresh cream or ice cream (see Tip).
