Ingredients

  • unsalted butter
  • crystallised ginger
  • dark brown sugar
  • golden syrup
  • milk
  • egg
  • self-raising flour
  • ground ginger
  • bicarbonate of soda
  • sea salt

Instructions

  1. Place crystallised ginger into mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula.
  2. Add butter, sugar and golden syrup and cook 2 min/98°C/speed 1. Scrape down sides of mixing bowl with spatula.
  3. Add milk, egg, flour, ginger, bicarb soda and salt, then mix 30 sec/speed 4. Transfer between prepared nester and cover with baking paper. Rinse mixing bowl.
  4. Place water into mixing bowl. Place Varoma dish into position, insert Varoma tray and place nester onto it. Secure Varoma lid and steam 18 min/Varoma/speed 4. Serve warm or cooled drizzled with caramel syrup and custard, fresh cream or ice cream (see Tip).
