Ingrediënten

  • chicken breasts, skinless
  • fresh root ginger
  • garlic cloves
  • scotch bonnet chilli
  • lime
  • orange
  • soft dark brown sugar
  • black peppercorns
  • whole allspice berries
  • fine sea salt

Bereidingswijze

  1. Place ginger, garlic, chilli, lime peel, orange peel, sugar, peppercorns, allspice, salt, cinnamon and nutmeg in mixing bowl then chop 3 sec/speed 8. Scrape down sides of mixing bowl with spatula.
  2. Add thyme, coriander and spring onions then chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula then chop again 5 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  3. Add orange juice, lime juice, vinegar and oil then mix 5 sec/speed 4. Pour over reserved chicken and stir to coat. Cover with cling film and place in fridge for at least 2 hours or overnight. Meanwhile, clean mixing bowl.
  4. Towards the end of marinating time, preheat oven to 180°C and line a roasting tin with foil.
  5. Transfer marinated chicken breasts and marinade to prepared tin and bake for 25-30 minutes (180°C) until cooked thoroughly. Meanwhile, make mash.
