Jerk Chicken with Sweet Potato Mash and Vegetables

Ingrediënten
- chicken breasts, skinless
- fresh root ginger
- garlic cloves
- scotch bonnet chilli
- lime
- orange
- soft dark brown sugar
- black peppercorns
- whole allspice berries
- fine sea salt
Bereidingswijze
- Place ginger, garlic, chilli, lime peel, orange peel, sugar, peppercorns, allspice, salt, cinnamon and nutmeg in mixing bowl then chop 3 sec/speed 8. Scrape down sides of mixing bowl with spatula.
- Add thyme, coriander and spring onions then chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula then chop again 5 sec/speed 5. Scrape down sides of mixing bowl with spatula.
- Add orange juice, lime juice, vinegar and oil then mix 5 sec/speed 4. Pour over reserved chicken and stir to coat. Cover with cling film and place in fridge for at least 2 hours or overnight. Meanwhile, clean mixing bowl.
- Towards the end of marinating time, preheat oven to 180°C and line a roasting tin with foil.
- Transfer marinated chicken breasts and marinade to prepared tin and bake for 25-30 minutes (180°C) until cooked thoroughly. Meanwhile, make mash.
