Ingrediënten
- Chinese cabbage
- fine sea salt
- water
- daikon (Japanese radish)
- spring onions
- garlic cloves
- fresh root ginger
- caster sugar
- shrimp paste
- Korean chilli paste (gochujang)
Bereidingswijze
- After this time, drain cabbage in Varoma dish, rinse thoroughly under cold water then leave to drain for 10 minutes. Meanwhile, continue with recipe.
- Place garlic, sugar and ginger in mixing bowl then chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula then chop again 5 sec/speed 5.
- Add shrimp paste and Korean chilli paste then blend 5 sec/speed 7. Scrape down sides of mixing bowl with spatula then blend again 5 sec/speed 5.
- Squeeze out any excess water from cabbage then add to bowl with daikon. Transfer chilli paste mixture to bowl with cabbage then, wearing disposable gloves, mix together thoroughly, massaging until vegetables are limp and brine is released (8-10 minutes).
