Ingredients
- fresh grated coconut
- salt
- pandan leaves
- cooking oil
- water
- sugar
- rice flour
- tapioca starch
- coconut milk
- alkaline water (optional)
Instructions
- Place 170 g water and pandan leaves in mixing bowl, Blend /1 min. Transfer pandan juice to a jug through a fine mesh strainer. Rinse mixing bowl.
- Place sugar, 65 g water and reserved pandan juice in mixing bowl, mix 2 min 30 sec/60°C/speed 1.
- Add rice flour, tapioca starch, coconut milk, 1 tsp salt and alkaline water (optional), mix 2 min/speed 4.
- Place 1200 g water in mixing bowl, boil Kettle /100°C. Place Varoma into position, steam 15 min/Varoma/speed 3. Carefully remove Varoma tray with Thermomix® Nester and set aside. Place reserved grated coconut in Varoma dish. Cover Varoma, steam 8 min/Varoma/speed 3. Remove Varoma and set aside.
