Ingredients

  • glutinous rice
  • water
  • blue clitoria flowers (bunga telang)
  • hot water
  • coconut milk
  • salt
  • coconut oil
  • water
  • pandan leaves

Instructions

  1. Place a bowl on mixing bowl lid, weigh in 100 g glutinous rice, cover with water and soak for 4 hours or overnight in refrigerator. Place another bowl on mixing bowl lid, weight in 10 g blue clitoria flowers and 50 g hot water, set aside and soak for 10 minutes.
  2. Discard water from glutinous rice, add 80 g coconut milk and 1 pinch salt to it, mix well and set aside. Grease Thermomix® Nester with coconut oil. Divide glutinous rice evenly in Thermomix® Nester. Place 800 g water in mixing bowl, insert prepared Thermomix® Nester in Varoma tray and place in Varoma dish, place Varoma dish into position. Place pandan leaves on top of glutinous rice. Cover Varoma, steam 20 min/Varoma/speed 2. Carefully open Varoma lid, remove pandan leaves with kitchen tongs. Mix glutinous rice well, with the back of a spoon, press down cooked glutinous rice until compact and firm. Sprinkle blue clitoria flower water on rice in patches. Continue to steam 5 min/Varoma/speed 2. Set Varoma aside. Empty mixing bowl.
  3. Place pandan leaves and 100 g water in mixing bowl, blend 1 min/speed 10. Strain mixture through a fine mesh strainer into a bowl and set aside. Rinse mixing bowl.
  4. Place reserved pandan juice, coconut milk, egg, sugar, tapioca flour, rice flour, potato starch and salt in mixing bowl, cook 5 min/80°C/speed 2 until batter has thickened. Transfer batter to Thermomix® Nester with cooked glutinous rice using a fine mesh strainer and cover with cling film. Clean mixing bowl.
  5. Place 500 g water in mixing bowl, boil Kettle /100°C. Place Varoma with Thermomix® Nester into position, steam 20 min/Varoma/speed 2. Set Varoma aside. Carefully open Varoma lid and allow seri muka to cool before unmoulding and serve.
